Locksley Tuscadero

Locksley Tuscadero, a play on a mojito, is named with a bit of nostalgia for Happy Days. Remember The Fonz’s girlfriend? Pinky Tuscadero, as this cocktail is pink, pink, pink, we thought it appropriate.

50ml Sir Robin of Locksley® Gin
25ml Pink Grapefruit Juice
10ml Pink Peppercorn Syrup
4 leaves of fresh Mint

Muddle the Mint leaves and syrup before adding the other ingredients with ice. Shake well and strain into a chilled Martini glass.

Garnish with a sprig of mint.

To make the Pink Peppercorn Syrup, coarsely crush half a cup of Pink Peppercorns. Bring to the boil in a saucepan with 1 cup of sugar and 1 cup of water, until the sugar dissolves. Let cool and infuse for a couple of hours before straining.

NB… Simple Syrup for cocktails is commonly 1 part water to 2 parts sugar. For this recipe we used a slightly different ratio, to achieve a better balance between the sweetness of the syrup and the flavour concentration of the Pink Peppercorns.
